Thai Inspired Pumpkin Curry
Ingredients
1. Pumpkin
1/3
3. Yellow Thai Curry Paste
Generous amount! to taste
5. turmeric root
1/2 inch - 1 inch chopped
7. Fresh Basil Leaves
1/2 - 1 cup
9. Rock Salt
to taste
11. Lime
1 whole
2. golden potatoes
2 medium
4. Ginger
1 inch chopped
6. Garlic
2 cloves
8. Coconut Milk
1 can
10. Assorted veggies (optional)

Ayurvedic Information
Pumpkin is considered an auspicious fruit during ceremonies to remove subtle negativity but beware that it can be constipating in nature. It is best cooked in plenty of liquid and made easier to digest as in a meal like this. Anti-oxidant, anti-inflammatory, sweet, and most beneficial for pitta dosha, this delightful fruit is said to be especially good for skin.
Method of Preparation

Boil pumpkin crunch's in enough water to cover it.

Add the Thai curry paste blend generously, ginger, turmeric root, and lastly coconut milk.

Blend 1/2 the contents of the pot, leaving some pumpkin chunks whole. And re -integrate the blended part into the pot.

In a separate pot, steam sauté some garlic, potatoes, and basil together.

Combine the two pots into one and salt to taste. Feel free to add any interesting veggies like mushrooms and/or bok choy.

Squeeze a generous amount of lime.
