Ragi Banana Pancakes
Ingredients
1. Ragi
1 cup
3. almond milk
1 cup
5. Cinnamon
1 pinch
7. Vanilla paste, nuts, salt
to taste (optional)
2. Banana

4. Maple Syrup
1 tbsp
6. Baking Soda
1 tbsp
Ayurvedic Information
While I do not usually promote the combining of fruit and grains, in this case, the ragi is so dry that banana adds a needed moisture. Together in a batter rather than as separate items, the banana and the ragi can digest more easily together. I consider this breakfast a treat, not a staple

Ragi, also known as finger millet, is a very nutritious grain, especially beneficially for pitta and kapha doshas. It is a strong source of natural fibre, calcium and iron and strengthens bones.
Method of Preparation

Preheat a skillet by setting the burner to medium high

In a bowl, combine flour, any added nuts, baking powder, and salt.

Then combine mashed banana, maple syrup, vanilla if using, and vegan milk.

Ladle the batter onto a greased griddle and line the edges of the pancake with ghee before flipping. Cook through.
