Chia Berry Pudding
Ingredients
1. Chia seeds
1/3 cup
3. Ground Ginger
1 tsp
5. Ground Cinnamon
1/4 tsp
7. Fresh Fruit
1 tsp
2. Organic canned coconut milk
1 cup
4.Honey
1 tbsp
6. Nutmeg
1/4 tsp
Ayurvedic Information
Chia seeds are a demulcent food that also help to bulk up stool. They contain essential fatty acids like omega 3s and may help to lower blood sugar. They are pacifying for Pitta and Vāta and increasing for Kapha.
This midafternoon treat could be the perfect salve for a very hot summer day as it is made with cooling and hydrating ingredients.
Method of Preparation

In a bowl whisk, coconut milk, chia, spices, and honey

Cover and refrigerate overnight until the chia has absorbed the liquid and become pudding-like

Spoon into beautiful dishes and top with fresh fruit

Then keep out of the fridge and serve at room temp
