Sweet Potato Poha
Ingredients
1. Thick Mota Poha
2 cups
3. Black Mustard Seed
1/2 tsp
5. Minced Shallot
1/2 cup
7. Lime
1/2 of one
2. Oil
2 tbsp
4. Curry Leaves
6 of them
6. Medium Sweet Potato
1 chopped
8. Cilantro/coriander leaves
for garnish
Ayurvedic Information
Balancing for Vāta and Pitta doshas but can be increasing for kapha in excess, poha works as a breakfast, lunch or accompaniment to a meal like rice. A fairly fast morning option for busy people, it cooks without water. Poha is flattened rice that comes in white and other varieties. Always get the thick kind for this recipe as the thin kind will mush.
Method of Preparation

Rinse the poha in a colander and place aside for 10 minutes with a pinch of salt.

Heat oil and the mustard seeds until they pop.

Add shallot and fry till translucent

Add sweet potato or green peas if using

Sprinkle turmeric and salt

Add drained poha and sprinkle water to keep from sticking

Garnish with cilantro and lime (optionally add crushed roasted peanuts).
